Vegan Summertime Overnight Oats // Recipe!



TGIF is what I have to say! I don't know about you guys but its been a bit of a crazy week and I am so ready to just switch off my phone and my laptop and get away from all the radiation. I'm very sensitive to EMFS so when I'm on my phone or laptop for a period of time my hands start to ache - I know a little freaky but I'm not the only one, I know other people that suffer too!


Anyway today I am bringing you a recipe - the very first recipe on this blog! This has been my go to breakfast for last 2 months (pretty much since the beginning of summer and the mango season!) and I am digging it! Its simple, nutrient dense, delicious and easy to pack with you, if you're on the run.


VEGAN SUMMERTIME OVERNIGHT OATS


Ingredients:

  • 1/2 cup rolled oats (do more or less depending on how hungry you are!)

  • 1 tsp psyllium husk*

  • Water or plant milk of choice

  • Cinnamon

  • 1 tbsp ground flaxseeds

  • 1 banana*

  • 1/2 mango*

  • 1 tbsp chopped almonds*

* see notes at the bottom of the page


Recipe:

  1. Add the rolled oats and psyllium husk to a cup or jar (if you're eating it on the run then place it in a jar so you can just take it with you in the morning!).

  2. Cover the oats with enough water or plant milk until it is just submerged. Place in the fridge and refrigerate overnight.

  3. The next morning spoon the oats into the bowl. You'll find that they're nice and thick now due to the psyllium husk.

  4. Add your ground flax seeds and a dash of cinnamon, (the more cinnamon the better!), and then mix it all together. You may need to add some extra water or plant milk if its gotten a little too thick!

  5. Once its all combined you can top it with the chopped up banana, mango, almonds and an extra dusting of cinnamon (always extra cinnamon in my opinion!)

  6. Dig in!

*Notes:

  • The psyllium husk is optional, it just adds some extra thickness and creaminess to the oats, but if you don't have it you can also just sub it for an extra tablespoon of flaxseeds.

  • Feel free to change up the fruit, add different nuts, seeds or nut butters, and any other toppings you like!
